I made my wife dinner though. Roast pork tenderloin, roasted grape tomatoes with garlic, and made from scratch apple salsa. Sous vide the pork after a chipotle chile powder, honey and Dijon rub, then sear in the cast iron skillet. Leftovers for tacos for lunch in a couple days.

Not at all. Trimmed four pork tenderloins to remove the silver skin and chopped the jalapeño pepper, cilantro and onion. I’ll admit I used a mandolin to slice the red onion very thinly before chopping to get well minced onions. Peel and chop an apple, squeeze a lime over it all and let it sit 5-10 before serving. (three tenderloins went into the freezer).u a damn lie lmao
