I agree. I don't think he's polished enough, especially without an NFL offseason, to have blocking responsibilities on the field in year one.

I just feel his pass catching upside might make him more valuable than a someone like Carlson.

Yeah, this is what happens when you demand a trade with zero leverage. The team can call your bluff and you're fucked. It's not like he can realistically hold out either. He'll just end up getting fined for it or benched, and no team is going to give big money to a guy coming off of two lost seasons who is still 75% unrealized potential.
