I haven't made a full course meal (including dessert) in a long while. I'm trying to think of something new to make. I seem to hover in the Italian dishes.

Need some ideas.

Just so that I get used to posting my own pics, here is a little food porn for you with one of my favorite grilling dishes. I marinated a London Broil in Polynesian sauce overnight then wrapped it in bacon. I stuffed Anaheim peppers with shredded cheese, bread crumbs, and cream cheese then also wrapped them in bacon. Finally, some zucchini cut in half and coated in olive oil/salt. I dipped them in lemon juice after grilling because marinating veggies after they are grilled is the way to go.

Made Molten Lava cakes for the first time.

The recipe was very simple and not too time consuming. I didn't serve them too hot, so the lava wasn't oozing out, but what still there.

I may have dusted it too much with the powdered sugar. But it was still very rich and good.

Would you mind posting the recipe? That looks awesome.

Max, here's the Molten Lava Cake recipe:


4 tablespoons unsalted butter, room temperature, plus more for muffin tins
1/3 cup granulated sugar, plus more for muffin tins
3 large eggs
1/3 cup all-purpose flour
1/4 teaspoon salt
8 ounces bittersweet chocolate, melted (I used 2- 60% Cacoa chocolate bars)
Confectioners' sugar, for dusting
Whipped Cream, for serving

STEP 1
Preheat oven to 400 degrees. Generously butter 6 cups of a standard muffin tin. Dust with granulated sugar, and tap out excess. Set aside.
IN THIS STEP: Buttering and Lining Cake Pans
STEP 2
In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and granulated sugar until fluffy. Add eggs one at a time, beating well after each addition. With the mixer on low speed, beat in flour and salt until just combined. Beat in chocolate until just combined. Divide batter evenly among prepared muffin cups.
IN THIS STEP: How to Cream Butter Properly
STEP 3
Place muffin tin on a baking sheet; bake just until tops of the cakes no longer jiggle when the pan is lightly shaken, 8 to 10 minutes. Remove from oven; let stand 10 minutes.
STEP 4
To serve, turn out cakes, and place on serving plates, bottom sides up. Dust with confectioners' sugar, and serve with whipped cream, if desired.

I apologize if this has been answered prior to the last two pages, heres hoping for the former...

I apologize if this has been answered prior to the last two pages, heres hoping for the former...

Charcoal > Propane

That is Weber' s top end charcoal grill. My father in law has the same one with dual charcoal/propane, but they are no longer as easily found as this model. Cost me $300 at Home Depot but worth every penny.

You are so right...I stupidly just treated it like a flour tortilla. Now I love corn tortillas! Flour = stretchy, corn = crispy.

Really wish my phone didn't have a cracked lens, they are quite pretty to look at tonight.

Those tacos you made looked great so I tried some of my own and holy shit they're amazing. Frying the corn tortilla in butter makes all of the difference. Thanks for the idea and thanks Keys for showing me how to do corn tortillas right!
