Made Molten Lava cakes for the first time.

The recipe was very simple and not too time consuming. I didn't serve them too hot, so the lava wasn't oozing out, but what still there.

I may have dusted it too much with the powdered sugar. But it was still very rich and good.
 
Wish I was in Ohio for my dads deep-fried turkey.
 
Stoked for dinner tonight

I've got about four pounds of pork chunked up in the slow cooker with half a dos Equis, oregano, chipotles and adobo, a cinnamon stick, bit of sliced onion and garlic, salt, pepper, cumin, chile powder...had a bit of coffee left over from this morning so I threw that in too. And water to cover. I'm wondering if I should add a bit of brown sugar....probably. Want light on the cumin and chile powder tho, I want the chipotles and adobo to come through while not overpowering the pork.

Got corn tortillas and whatever else I decide to use as toppers...black beans, corn, sour cream, cilantro, taco sauce.

Last night I invited one of my old flat mates from my single days over with his girlfriend. I was supposed to smoke ribs but the rain wouldn't let me. I ended up slow roasting the ribs at 280 degrees in the oven along with some slow roasted sweet potato, parsnip and beet hash... mind blowing.

sounds delicious. can't wait till summer comes. love making ribs even though i don't have a smoker.

few months ago...maybe half a year ago...gf got a slow cooker and i made some jerky. might have posted about it in this thread idk. first batch was more ordinary flavors, one was teriyaki ginger and one was chipotle barbeque...anyways i post this because the next time i make it i want to do something fun and i thought of orange, chipotle, and cocoa or coffee :)

i like to open the window when making jerky though, since it can really stink up an 800 sq ft apartment. i don't mind the smell but i don't like going to work with my clothes smelling like jerky.

I will en they are done, but my camera phone sucks, cracked lens.

Pulled the pork at halftime, wasn't happy with the flavor. Added more chipotles and adobo, molasses, and apple cider vinegar to balance.
 
Also corn tortillas effing suck. These guys taste pretty good tho. About to eat my fifth one.
 
Pulled pork tastes better the second day. Throw it in a nonstick skillet or onto a hot plate, make it crisp up. Corn tortillas are better fried in a little butter or grilled right on a gas range.
 
Yeah I just microwaved them which was a disaster.

ate six tacos last night, five for lunch today.

for dinner i tried something different...and it is amazing.

corn tortillas, fried up a bit first (thanks keys)...pork, beans/corn, shredded cheddar, oven at 500 for a few minutes...topped with a quick guac i made while they were in the oven (cilantro, avacado, minced onion, lime juice, EVOO, salt)...topped with some hot taco sauce.

unfortunately i had to use my own camera so the picture looks like vomit, but you get the idea...

Microwaving a corn tortilla is like cooking your red meat in the microwave... its a waste of a perfectly good product. Those tacos look damn good though!
 
You are so right...I stupidly just treated it like a flour tortilla. Now I love corn tortillas! Flour = stretchy, corn = crispy.

Really wish my phone didn't have a cracked lens, they are quite pretty to look at tonight.
