Andy is a better pick and roll finisher, a better jumpshooter. He can guard multiple positions. He is one of the best if not the best pick and roll defenders in the league. His weakside awareness and overall bball IQ is way better than Hibbert's. Do you remember how many 20+ rebounding games he had last year? His rebounding is on a Noah or Kevin love level. I won't say Dwight because that has more to do with athleticism. He is one of the most fundamentally sound players in the league.
No one really knows what AV can do on offense because it is not his focus. When he has been called upon to score he has done a great job. Hell, he won that game against the Hawks years ago with a buzzer beating 3.
Andy is an excellent passer. You can run the offense through him much like Marc Gasol. Andy sets some of the best screens in the NBA. He is crafty, and there are only a few guys who put English on the ball like he does. Irving is one of them.
Hibbert is slow footed and is a post guy. That is it. He is a traditional center with a hook, a short jump shot, and he is strong as hell. He is a load to be sure, but saying he is more versatile than AV is not true. You can't run Hibbert in a small lineup. You can run AV in a small or big lineup at pf or C. That and all of the above is why I think he is more versatile.
Like I said, health is obviously very much in Hibbert's favor.
