I just grilled the best MOTHER^&**& steak ever....

Hard to believe I didn't eat red meat three years ago... what the hell was I thinking?

That being a ginger you had enough red in your life?

But for real, butchers are the way to go. Not many around here where I live, but there were ton around in Ohio.

My dad used to take his deer to this butcher. It was like Christmas when he brought home the deer jerky, sticks, and even the dogs.
 
When I wasn't eating pork or beef, I had a 30 inch waist. Now I'm at 34-36 depending on how much cardio I'm doing. I'm totally fine with the trade off.

I already put up my favorite marinade for a thick cut of steak. Bourbon, soy sauce, wine vinegar, olive oil, garlic, salt, pepper, oregano. It's perfection.

For thinner cuts I took some advice from @gourimoko earlier in the summer and went the Korean route lately. You can order this company online, and I suggest giving it a try:

Working on an 8lb brisket in the smoker right now. Should be able to take it out at 3, foil, towel and put it in the cooler to serve at 6.

Used a Spice and coffee rub with some added Sugar. Pumped it with beef broth and then crutched it once it got to 160. Stalling right now which is always a little nerve-racking.
 
Second brisket I ever made. The first time I was still a noob and didn't even have a digital thermometer. Was using the useless one inside the smoker.

This was the first time I've ever made burnt ends.

Fucking amazing. Tasted like chinese food made of actual beef. I would never bother slicing the point now that I've had these. Ends every time.
 
I made the mistake of cracking this thread open while on the road. I'm now home and it's game on. Gonna go get some ribeyes from Mack's in Lodi (best meat in Ashland/Wayne/Richland Counties) and give the searing method a go.

I gotta grab a nice cast-iron pan in the morning too. I have a portable butane powered cooktop that we use for tailgating at Browns games. I'm pretty sure I can obtain the appropriate heat in the cast-iron skillet using it. I'd like to eliminate smoking up the entire house, especially for such a short sear time.

Also hoping to throw the pan right in my preheated grill to finish the meat. Essentially, all done in the man garage while jamming out and having a few cold beers.

Anyone ever cook a Denver cut steak? I'm cooking some up tonight.
 
Just got a cast iron skillet and pan. I'm super excited to sear some steaks on these bad boys!

Those are cool as hell. Be sure to read up on proper care. If you season them correctly from the start and avoid ruining the seasoning, your great grandkids will be searing off steak with it.
 
That was the first thing I did ;) but thanks for the advice Keys!
 
I clean my cast iron pans with hot water and kosher salt - lots - and wipe with paper towels.

That's it.
 
Don't ignore the flap steak gentlemen. It's one of the cheapest cuts of steak per pound because it is a little stringy, but if you cut it thin against the grain it has outstanding flavor... almost filet mignon. If you buy a carne asada taco, chances are you are grubbing down a flap steak cut.

And yes, if you aren't grilling, sear that steak like Bigmar taught you. I don't have a back yard, so grilling for me is a big production. I have to go cart the grill two blocks to the park... but obviously it's still worth it on a weekend.
Not to be rude, and I know it is half a decade later, but I thought you were talking about poon. Like women. Whoops. Dirty mind I guess
 
Also got a skillet for the first time a couple months ago.

Amazing.

Only thing better is @Randolphkeys' steak recipes than @QuadrupleDouble's.


Just got back from the butcher's with some top round steaks. "Damn honey, we are out of burboun and I was going to make my grandpa's steaks."

Mind you I knew damn well I drank all the whiskey on Christmas. I also know my wife gives me the evil eye when I angle for more booze in my life with a newborn waking us up every few hours.

"Grandpa's steak? Awesome idea, see you when you get back!"

I now realize my grandfather didn't just give me the perfect steak marinade, he gave me a reason to keep the bar stocked at all times. I do miss that old genius...
