Stovetop or oven?

I also just use the oven. I put it as high as it goes alittle over 500 degrees. Put the rack on the lowest position. I don't preheat the cast iron pan, just put it in cold with the pizza.

I will use colder or near frozen mozzarella from a block which allows the crust to go a little longer. I stopped using pre shredded cheese because the anti-caking agent will make the cheese burn before the crust is truly done even if the cheese is frozen.

Many, many years ago, I picked up 3 Griswold frying pans at a garage sale for a buck each. (8", 10", 12")

Donated them to Goodwill before a move about 30 years ago.

Kinda wish I had them back now.
