Why should it be a steal?

It goes as a block and a rebound. Same way any other would get a rebound if they control the ball after a Mobley block.

Am I crazy for not wanting him to gain a bunch of weight?

When I remember some of the great big men from history - I’m talking wayback in the day - some of them stayed thin and I think they were healthier for it. Obviously this locks him into PF rather than center long term. But I don’t know if I’ve seen strength be an issue for him other than guarding centers under the hoop. He has wiry strength already.

Just food for thought.

I want him to do whatever Allen is doing. Maintaining his mobility, but getting functionally stronger.

The timing and anticipation skill this takes is truly DPOTY level shit.

Mobley should absolutely make an all-defense team this year if he keeps this up. Probably first team, though I’d say it’s more likely he would make 2nd team just because of rookie bias.
